-Fizzy Raspberry Lemonade: makes 4 to 6 servings
Ingredients
1 10-ounce package frozen raspberries in syrup, thawed
1 1/4 cups fresh lemon juice
3/4 cup sugar
2 cups sparkling water
ice cubes
lemon slices (optional)
fresh raspberries (optional)
How To
Puree thawed barries in processor. Strain into pitcher, pressing on solids in strainer to
extract as much liquid as possible. Mix in lemon juice and sugar; stir until sugar
dissolves. Mix in 2 cups sparkling water. Fill pitcher with ice. Let stand 5 minutes. Fill
4 to 6 tall glasses with ice; add lemonade. Garnish with lemon slices and fresh
raspberries.

Ingredients
2/3 cup sugar
1/2 tsp salt
2 1/2 cups allpurpose flour
1 Tbsp baking powder
1 large egg
1/3 cup vegetable oil
1 1/4 cups reducedfat (2%) milk
1 tsp vanilla extract
1 cup fresh or frozen blueberries
How To
Preheat the oven to 400°F (205°C)
Combine the sugar, salt, flour, and baking powder. In a separate bowl,
combine the liquid ingredients. Make a well in the center of the dry ingredients and add
the liquid ingredients and blueberries. Mix with a fork until it forms a loose batter.
Lightly coat a muffin pan with nonstick cooking spray. Spoon the batter into
the pan until the cups are 3/4 filled. Bake for 18 to 20 minutes, or until the tops are
golden brown and the centers are firm.
